A simple, Paleo yogurt parfait. I’m not even Paleo but I don’t like granola in my parfait. I’m sure this will work with whatever nut and seed mix you prefer: cashews, pistachios, hazlenuts, sunflower seeds, etc. For this batch I used a mix of raw almonds, walnuts, and pumpkin seeds. I like to purchase them raw and then toast at home.
This isn’t a recipe. Just wanted to share how I do mine. 🙂
Stir over medium heat in a clean dry pan. Keep stirring until you get a nice nutty toasty roasty aroma. Then stir for another minute or so and move contents into a bowl.
The dried shredded coconut will brown super fast at the end. When it just starts coloring I turn the heat off and stir for a minute or two and then immediately remove from pan into a waiting bowl.
I like to put the toasted nuts in a ziploc and bash until it’s broken up into small pieces.
Chop up some ripe strawberries and add a bit of Grade B pure maple syrup and,
